July is the month of heat. And I really can't stand heat, by the way. Summer is probably my least favorite season. I've loved winter my entire life. But if there is one reason I wait for summer every year, it's so I can enjoy bingsu to the fullest extent.

여름의 계절, 7월. 저는 더위는 정말 싫어합니다. 사실 제가 가장 싫어하는 계절도 여름이에요. 제가 사랑하는 계절은 겨울입니다. 그런데 제가 여름을 기다리는 단 한 가지 이유가 있다면 바로 빙수를 마음껏 먹을 수 있기 때문입니다.

A short history of bingsu빙수의 짧은 역사

Bingsu is Korea's ultimate summer dessert. It's hard to imagine a Korean summer without it. The history of bingsu actually goes much further back than I expected. During the Joseon Dynasty, ice was stored in government-run ice houses called “binggo,” and crushed ice was enjoyed with fruit and other toppings. As ice became more widely available in the early 20th century, bingsu became accessible to the general public, and for decades, when Koreans said “bingsu,” they were usually talking about “patbingsu,” or shaved ice topped with sweet red beans.

Nowadays, though, there are countless versions of bingsu. Strawberry, matcha, chocolate, melon, peach, and basically every fruit you can imagine have found their way onto shaved ice. Still, when I think of the most classic, original bingsu, I think of red bean. Interestingly, though, I ended up eating mango bingsu more than anything else this summer.

I think red bean is one of those flavors that people either love or don't really care for, while mango is much easier for everyone to enjoy. Mango bingsu also wasn't always this popular in Korea. The premium mango bingsu trend really took off after luxury hotels began piling fresh, often Jeju-grown mangoes onto milk-based shaved ice and selling them at surprisingly expensive prices. The Shilla Jeju first introduced its apple mango bingsu in 2008, followed by the Seoul Shilla in 2011, and the dessert helped start the now-famous luxury hotel bingsu competition.

Of course, you don't need to spend a fortune at a luxury hotel to enjoy good mango bingsu. There are so many cafes making their own versions, along with countless other creative bingsus. So, here are all the bingsus I had throughout July!

빙수는 정말 한국을 대표하는 여름 디저트라고 할 수 있습니다. 한국의 여름에서 빙수를 빼놓는다는 것이 상상이 안 될 정도로, 여름이 되면 어디에서나 다양한 종류의 빙수를 만나볼 수 있어요. 사실 빙수의 역사는 생각보다 훨씬 오래되었습니다. 조선시대에는 “빙고”라는 얼음 저장고에 겨울에 채취한 얼음을 보관했고, 여름에는 이 얼음을 잘게 부숴 과일 등을 곁들여 먹었다고 합니다. 이후 20세기 초 제빙 기술이 발달하면서 빙수가 대중에게도 퍼지기 시작했고, 오랫동안 “빙수”라고 하면 팥을 올린 팥빙수를 가장 먼저 떠올릴 정도로 팥빙수가 대표적인 형태였습니다.

하지만 요즘은 정말 다양한 종류의 빙수가 등장하고 있습니다. 딸기, 말차, 초콜릿부터 복숭아, 망고, 참외처럼 제철 과일까지 거의 모든 재료가 빙수의 토핑이 되는 것 같아요. 그래도 빙수의 근본이라고 하면 역시 팥빙수가 아닐까 싶습니다. 그런데 재미있게도 이번 여름에는 팥빙수보다 망고빙수를 더 많이 먹은 것 같아요.

팥은 사실 조금 호불호가 갈리는 맛이지만 망고는 남녀노소 누구나 좋아할 수 있는 맛이라는 생각이 듭니다. 저는 개인적으로 팥을 좋아한답니다. 그리고 망고빙수가 지금처럼 한국에서 큰 인기를 얻기 시작한 것도 비교적 최근의 일입니다. 특히 고급 호텔에서 제주산 애플망고를 우유빙수 위에 산더미처럼 올린 프리미엄 망고빙수를 판매하면서 지금의 “망고빙수” 열풍이 본격적으로 시작되었습니다. 제주신라호텔에서는 2008년 애플망고빙수를 처음 선보였고, 서울신라호텔에서도 2011년부터 판매하면서 고급 호텔들의 프리미엄 빙수 경쟁이 본격화되었습니다.

물론 꼭 고급 호텔이 아니어도 정말 맛있는 망고빙수를, 그리고 다른 창의적인 빙수들도 얼마든지 만날 수 있습니다. 그래서 제가 7월 한 달 동안 먹었던 빙수들을 이제 소개해볼까 합니다!

NUKNOK Yeonnam — Happy Peach Bingsu누크녹 연남 — 행복한, 복숭아빙수

NUKNOK Yeonnam — Happy Peach Bingsu

I came here with my friends after making rings in Yeonnam. Since it was such a hot day, we wanted something cold to cool ourselves down, and that led us to NUKNOK.

Apparently, the name NUKNOK was inspired by Nuuk, the capital of Greenland. The concept is based around stepping away from the busy and competitive rhythm of everyday life and embracing a slower, more peaceful way of spending time. Honestly, I think that idea fit perfectly with what we were doing that afternoon.

The Happy Peach Bingsu came with milk ice, peach syrup, peach preserves, and even a little four-leaf clover on top. The combination of the refreshing yogurt ice cream, soft peach, and creamy milk ice worked so well together. Everything practically melted in my mouth.

What I especially loved were the larger pieces of peach preserves hidden throughout the bingsu. Every time I came across one, the fruity flavor became much stronger, balancing the rich milk ice and sweet peach syrup. It was exactly the kind of dessert that makes you think, “Yep. Summer really is bingsu season.” My friend especially loves bingsu, so it was even better getting to enjoy it together.

여기는 친구들이랑 연남의 반지공방에서 반지를 만든 후 더위를 식히려 들린 빙수집이었어요. 누크녹이라는 이름은 그린란드의 작은 수도 누크라는 지역을 모티브로 시작했다고 하는데요. 바쁘고 치열한 일상에서 벗어나 “아무일도 없었고 그 이후에도 아무일도 없었으며 아무일도 일어나지 않았다”는 그린란드 사람들의 삶의 방식을 추구하고 누크녹에서의 편안한 시간을 준다고 합니다.

빙수에 대해서 말해보자면 우유얼음, 복숭아청, 복숭아조림, 그리고 네잎클로버가 올라가 있는데 상큼한 요거트 아이스크림이랑 빙수 그리고 복숭아라는 과일이 다 너무 조화롭게 어우러집니다. 입안에서 그야말로 사르르… 그리고 중간중간 씹히는 큰 복숭아 조림들이 과일의 향을 더욱 올려주면서 진한 우유얼음과 달달한 복숭아청을 먹으니 정말 여름엔 빙수다! 라는 생각이 또 한번 들었습니다. 친구가 특히 빙수를 좋아해서 더욱 맛있게 먹었어요.

The next day, I was back at a bingsu place with my friends. We had lunch at Hyundai Department Store Apgujeong and came here for dessert afterward. Cafe Mongi is already quite famous for its bingsu and desserts, and I had actually visited several times before, so this wasn't my first time trying it.

The Meringue Bingsu is Caffe Mongi's signature menu. The outside is covered in a layer of meringue, while the inside is filled with lemon ice and lemon zest, creating a combination of sweetness and bright citrus acidity. The contrast is honestly so unusual, but once you take the first bite, it becomes strangely addictive.

My friends actually preferred the chocolate cake we ordered on the side, but as someone who loves meringue, I was devouring the bingsu. The crisp, airy meringue gives the dessert a light sweetness before the lemon ice cuts through it with a refreshing sourness.

Guys, this is fusion, right? Who even thought of covering bingsu with meringue! Grateful to have this bingsu in Korea!

여기도 친구들이랑 먹으러 왔습니다. 압구정 현대백화점에서 밥 먹고 디저트로 먹으러 왔는데 여기 빙수는 워낙 유명해서 저도 여러번 먹어봤었어요.

특히 이 머랭빙수가 시그니처인데 겉에는 머랭으로 쌓여있고 안에는 레몬얼음과 레몬제스트로 채워져있어서 상큼함과 달콤함을 즐길 수 있습니다. 되게 특이한 조합이지만 한입 시작하면 중독성이 엄청나서 끊을 수 없어요.

제 친구들은 옆에 있는 초코케잌을 더 좋아했지만 저는 원래도 머랭을 좋아하는 사람으로써 이 빙수를 너무 맛있게 먹었습니다. 이런게 바로 퓨전 아닐까요. 어떻게 빙수를 머랭으로 덮을 생각을!

Caffe Mongi Pangyo — Classic Red Bean & Strawberry Cream

Just a few days later, I was back at the same cafe, but this time with my mom. Since I had already tried the Meringue Bingsu recently, I decided to go for what I would consider the more classic choices: the Classic Red Bean Bingsu and the Strawberry Cream Bingsu.

One of my favorite things about Caffe Mongi's bingsu is actually the rice cake, or tteok, on top. I genuinely think it's some of the best bingsu rice cake I've ever had. It's incredibly soft and chewy, and I think it plays a much bigger role than you might expect.

You know that moment when you've been eating cold bingsu for a while and suddenly you're like, “Ah… my teeth are cold… Should I stop eating now?” That's exactly when the chewy rice cake comes in. You take a bite of that soft, stretchy tteok, and suddenly you're ready to start eating the ice again.

The Strawberry Cream Bingsu was another fusion style creation, which was topped with cotton candy. It was definitely tasty, and I liked how the cotton candy made the whole thing look much more playful. The strawberry and cream combination itself was familiar and easy to enjoy, although personally, I don't think I'd order it again over some of their other options. It was fun to try, but I think the Classic Red Bean Bingsu was more satisfying for me. I just love red beans.

여기는 이제 엄마랑 왔습니다. 압구정에서 머랭빙수를 먹었던 똑같은 카페이고 보면 알다시피 아주 유명한 체인점이에요. 여기서는 최근에 머랭빙수를 먹었기 때문에 오리지널이라고 할 수 있는 클래식 팥빙수와 딸기크림 빙수를 먹었습니다.

여기 빙수의 가장 좋은 점은 위에 올라가는 떡인데 진짜 제가 먹어본 떡들 중에서 제일 맛있다고 할 정도로 쫄깃합니다. 이게 얼마나 중요한 가니쉬냐면, 팥이랑 우유얼음을 먹다가 앗 이시려 조금 춥다 이제 할때 쫄깃쫄깃한 떡을 먹어주면 얼마든지 다시 시작할 수 있는 그런 느낌을 주는거예요.

그리고 딸기크림 빙수 얘기를 좀 해보고 싶은데 이것도 퓨전입니다. 솜사탕이 올라가요. 맛은 있습니다. 특색도 있고요. 근데 또 시켜먹을지는 조금 아쉬운 느낌. 저는 역시 팥이 좋습니다.

ROYS Jamsil Lotte World Mall — Mango & Blueberry

If I had to choose my number one bingsu of the month, this would probably be it.

I've eaten Roys' bingsu almost every time I visit the Jamsil Lotte World Mall, and the mango bingsu has become my personal go-to. This time, I went with my mom, my aunt and my cousin who were visiting from the United States.

One thing I especially love about Roys is that you can choose the type of ice for the mango bingsu. You can choose between milk ice and mango ice, and I almost always go for the mango ice. If you're already going to eat mango bingsu, why not go all the way with mango ice too?

The mango ice makes the entire dessert taste even more fruity, while the fresh mango pieces on top add another layer of sweetness and texture. The ice itself is incredibly soft and almost melts immediately in your mouth. Reviews of Roys also consistently highlight the fresh mango and the choice between milk and mango ice, and I completely understand why.

My cousin chose the blueberry bingsu, so I got to try that one too. It was refreshing and fruity, but honestly, I still preferred my mango bingsu. I'm just loyal to my go-to menu. Guys, summer = bingsu. That's basically my conclusion.

잠실 롯데월드몰 갈때마다 먹는데 진짜 제 기준 빙수 1등입니다.

여기 좋은 점이 망고빙수는 얼음을 선택할 수 있다는 거예요. 우유얼음과 망고얼음 중에 고를 수 있는데 이게 망고 망고 조합으로 먹으면 정말 맛있습니다. 미국에서 온 이모랑 사촌언니랑 엄마랑 같이 가서 먹었어요.

블루베리 빙수는 사촌언니가 골랐고 저는 갈 때마다 먹는 망고를 골랐습니다. 역시 여름은 빙수예요.

This was my first time visiting Cachi Hwabang, and of course, I went straight for their signature mango bingsu.

The first thing I noticed was the amount of mango. There was basically a mountain of it sitting on top of the bingsu. It was 30,000 won, so definitely not cheap for a bowl of shaved ice, but compared with some of the other premium mango bingsus around Seoul, I thought the price was relatively reasonable.

And honestly, the mango itself was really good. It was sweet, juicy, and had that fresh tropical flavor that made the entire bingsu feel refreshing rather than overwhelmingly sweet. The soft milk ice underneath also worked well with the mango because it didn't compete with the fruit.

There were also cubes of cheese mixed into the dessert. I know some people might enjoy the sweet-and-savory combination, but personally, it wasn't really my thing. I think I would've preferred to let the mango be the main character.

The cafe itself was also surprisingly spacious and had a really nice atmosphere. Cachi Hwabang also has a flower shop, which makes the whole space feel especially pretty and bright.

처음 가본 곳이었습니다. 망고빙수를 먹었는데 망고가 산더미처럼 쌓여있었어요. 빙수치고 싸지 않은 가격인 3만원이지만 다른 망고빙수들과 비교했을때는 나은 가격이라고 생각합니다.

망고 퀄리티가 되게 좋았습니다. 안에 큐브치즈가 있는데 그건 제 취향은 딱히 아니었어요. 망고가 주인공이었으면 더 좋았을 것 같습니다.

카페가 넓고 분위기가 좋았고 밑에 꽃집도 같이 하고 있습니다.

Mimyo Yeonnam — Chamoe Bingsu

This was probably the most unexpected bingsu of the month.

Although I believe that I've visited quite a lot of dessert cafes, I had never heard of Mimyo before. I was meeting my friend who lives around Hongdae, and when I told her I was craving bingsu, she said that there was a place she had wanted to visit and took me there. And wow. This place was really different.

For one thing, Mimyo basically focuses on one bingsu at a time, changing the menu according to the season. In spring, they have featured things like cherry blossom and matcha bingsu, while summer brings their famous Korean melon, or chamoe, bingsu.

Another thing I found really cute was that the bingsu comes with a tea pairing. Even though I don't typically enjoy drinking tea, the tea paired with the bingsu was really nice. You also get a little coin with your order that you can use to get a random cat ID photo from the gatcha machine. I honestly wasn't expecting a cat photo to be part of my dessert experience, but I am definitely not complaining. So cute!

Now, onto the bingsu itself. I had previously tried a chamoe latte at Ichi Seoul, so I thought I had a pretty good idea of what chamoe in a dessert would taste like. Yet, I was completely wrong. The bingsu is built with layers of mascarpone cheese chamoe cream, chamoe custard, chamoe compote cooked with shiso, yuzu-jasmine tea jelly, meringue, condensed milk, and honey.

The first thing you get is the light, crisp sweetness of the meringue, followed by the creamy mascarpone and chamoe flavors. Then the yuzu jasmine jelly comes in with a bright citrusy note, while the shiso in the chamoe compote adds this subtle herbal freshness that I honestly wasn't expecting at all.

The more I ate, the more interesting it became because every spoonful tasted slightly different depending on which layer I got. The chamoe itself is naturally delicate and lightly sweet, so I really liked that the other ingredients didn't completely overpower it. So, my dear friend, thank you for introducing me to this place. Love you so much!

여기는 제가 나름 디저트 가게들을 많이 다녔다고는 하지만 처음 들어본 곳이었습니다. 근데 유명한 것 같더라고요. 홍대쪽 주민인 친구를 만나러 놀러갔다가 제가 빙수 먹고 싶다고 하니까 본인도 가보고 싶었던 곳이 있다고 하고 데려간 곳이에요.

되게되게 특이합니다. 일단 여기는 메뉴가 하나예요. 빙수. 그리고 계절마다 이 빙수의 테마가 바뀌는데 여름은 참외입니다. 그리고 여기의 또 특색있는 포인트는 빙수와 어울리는 차를 같이 내주고, 이 빙수를 시키면 코인을 주는데 고양이 증명사진을 뽑을 수 있어요. 너무 귀여워요!

빙수 얘기를 해보자면 정말 맛있었습니다. 예상 밖의 맛이었어요. 제가 신사에서 참외라떼를 먹었는데 그거랑 비슷할 줄 알았는데 상상이상으로 달랐습니다. 위에 마스카포네 치즈와 머랭, 그리고 안에 참외청과 유자젤리가 들어 있었어요. 친구야 좋은데 알려줘서 고마워~

And finally, if you're visiting South Korea and want to try bingsu for the first time, I would actually recommend starting with Sulbing. It may not have the same elaborate presentation or experimental ingredients as some of the specialty cafes above, but that's exactly why I think it's a good starting point. Sulbing helped bring traditional-style bingsu back into the spotlight as a mainstream dessert cafe menu, and it offers familiar versions like red bean and injeolmi bingsu alongside more modern seasonal options.

For me, bingsu is one of those desserts that perfectly captures Korean summer. It can be traditional, modern, extravagant, simple, fruity, creamy, or completely unexpected. But no matter what kind it is, there is something about sitting down with a huge bowl of shaved ice in the middle of a hot Korean summer that just feels right.

And after eating this much bingsu in one month, I think I've officially made my case: summer might be my least favorite season, but bingsu is definitely my favorite part of it. Let's all enjoy summer's bingsus!

그리고 한국에 처음 와서 빙수를 먹어보고 싶은 분들에게는 저는 설빙부터 추천하고 싶습니다. 물론 위에서 소개한 전문 디저트 카페들처럼 아주 독특하거나 화려한 빙수는 아닐 수 있습니다. 하지만 오히려 그렇기 때문에 한국식 빙수를 처음 경험하기에는 좋은 곳이라고 생각해요. 설빙은 전통적인 빙수를 현대적인 디저트 카페의 형태로 다시 대중화하는 데 큰 역할을 한 프랜차이즈 중 하나이고, 팥빙수나 인절미빙수처럼 한국에서 익숙한 맛부터 다양한 현대적인 메뉴까지 만나볼 수 있습니다.

저에게 빙수는 한국의 여름을 가장 잘 보여주는 디저트 중 하나인 것 같습니다. 전통적일 수도 있고, 현대적일 수도 있고, 화려할 수도 있고, 아주 단순할 수도 있고, 과일이 가득할 수도 있고, 아예 예상하지 못한 재료가 들어갈 수도 있습니다. 하지만 어떤 종류의 빙수든 무더운 한국의 여름날 시원한 빙수 한 그릇을 앞에 두고 앉아 있는 순간만큼은 정말 여름답게 느껴지는 것 같아요.

그리고 이렇게 7월 한 달 동안 빙수를 실컷 먹고 나니 확실히 알 것 같습니다. 여름은 제가 가장 싫어하는 계절이지만, 빙수만큼은 여름의 가장 좋은 부분인 것 같아요! 우리 다 같이 여름의 빙수들을 즐겨요!
